Chocolate Cake with Chocolate Glaze

I tried this recipe the other day. The biggest challenge was to change my thinking when shopping for the ingredients. Thank God for Shop Rite from home as I was just able to type the ingredients in the search window. I fully endorse using this as honestly I’d never find this stuff if I was looking for it in the store. Full disclosure, I had to use a stock photo I found online. After it came out of the oven, it didn’t last long.

Ingredients Chocolate Cake

  • 1/4 Cup Coconut Flour
  • 5 Eggs Separated
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Coconut Cream
  • 2 tsp Vanilla Extract
  • 4 tsp granulated sweetener
  • 1/2 Cup caco powder
  • a pinch of salt

Ingredients Chocolate Glaze

  • 1 cup coconut cream
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 Tbsp Cacao powder
  • 1 Tbsp MitoSweet
  • 1 pinch of salt

Instructions

  1. Preheat oven to 350 degrees. Grease an 8 inch metal cake pan.
  2. Whisk egg whites until foamy
  3. In a seperate bowl, mix all remaining chocolate cake ingredients. Then fold egg whites in slowly.
  4. Pour batter into cake pan. Bake for 25 minutes, or until a fork comes out clean.
  5. Prep glaze in a saucepan on low heat.
  6. Pour glaze into a glass jar to drizzle over the cake.
